This simple, fast, and easy (microwaveable) polenta recipe is inexpensive and healthy. Plus, there are a wide variety of toppings and additions that can be mixed with the polenta to give it more flavor.

Ingredients:

1 cup yellow cornmeal

4 cups water or chicken broth

Directions:

1. Mix together the cornmeal and water or chicken broth in a microwave safe dish.

2. Cook on high in the microwave for approximately five minutes.

3. Stir, and reduce heat to medium.

4. Cook for another 10 minutes, stopping the microwave to stir the polenta every five minutes. The total cooking time is 15 minutes.

5. Once the polenta is cooked, season to taste with salt and pepper or red pepper flakes. At this point, you can also mix in sun-dried tomatoes, sauteed vegetables or roasted red peppers.
